MUD Granola = Happy Mornings


..they are very secretive about their Recipes over at The Mudspot on 9th Street in my Neighborhood, the East Village (NYC).* MUD Coffee, Nice Staff, Hot Drinks, Cold Beer, Brunch all Day, and This: My absolute favorite Granola of all Times.

MUD GRANOLA - (for days and/or all your real Friends)
3 qts. Organic Oats
1 qt. whole Walnuts
2 cup sliced Almonds
1 stick (4oz.) Butter
3 cup Maple Syrup
1/2 box brown Sugar
3 T. Salt
1 T. Cinnamon
1 t. Cardamom
1 t. Nutmeg
Zest of 2 Oranges

1. chop walnuts so they are approximately the same size as oats and almonds and mix together
2. melt all other Ingredients together
3. mix all together well
4. spread a thin Layer on two to three Sheet Pans, not more than an Inch thick
5. cook for 10 – 15 minutes on 350 until light brown.
Stir around and cook again 10 minutes or so until toasty brown.
Let cool before breaking into large Chunks.

Serve with organic Yoghurt & freshly sliced seasonal Fruit. Eat!
